Buku Penanganan dan Pengolahan Produk Hortikultura hadir sebagai respons terhadap tingginya tingkat kehilangan hasil panen (post-harvest loss) dan rendahnya nilai tambah produk hortikultura di Indonesia. Kehilangan hasil panen, yang mencapai 20-30% untuk beberapa komoditas hortikultura, menjadi tantangan serius yang menghambat optimalisasi potensi sektor pertanian. Selain itu, minimnya pengetahuan tentang teknik pengolahan yang tepat menyebabkan produk hortikultura sering kali dijual dalam bentuk mentah dengan nilai ekonomi yang rendah. Buku ini bertujuan untuk mengatasi masalah tersebut dengan menyajikan informasi komprehensif tentang teknik penanganan dan pengolahan produk hortikultura yang dapat meningkatkan kualitas, daya simpan, dan nilai tambah produk. Terdiri dari sepuluh bab, yang disusun secara sistematis untuk memudahkan pembaca memahami setiap tahapan dalam penanganan dan pengolahan produk hortikultura mulai dari konsep dasar penanganan dan pengolahan produk hortikultura hingga pembahasan tentang manajemen rantai pasok produk hortikultura, yang mencakup koordinasi antara petani, pengolah, distributor, dan retailer untuk memastikan produk sampai ke konsumen dengan kualitas terbaik.
Manfaat utama dari buku ini adalah sebagai referensi bagi para stakeholder dalam industri hortikultura, termasuk petani, pelaku usaha, peneliti, mahasiswa, dan pemerintah. Bagi petani, buku ini dapat menjadi panduan untuk meningkatkan kualitas produk dan mengurangi kehilangan hasil panen. Bagi pelaku usaha, buku ini menyediakan informasi tentang teknik pengolahan yang dapat meningkatkan nilai tambah produk. Bagi peneliti dan mahasiswa, buku ini dapat menjadi sumber referensi untuk pengembangan inovasi di bidang hortikultura. Sementara itu, bagi pemerintah, buku ini dapat menjadi acuan dalam merumuskan kebijakan yang mendukung pengembangan sektor hortikultura. Melalui buku ini, penulis berharap dapat memberikan kontribusi nyata bagi kemajuan sektor hortikultura di Indonesia. Dengan meningkatnya kualitas dan nilai tambah produk hortikultura, diharapkan sektor ini dapat menjadi salah satu pilar utama dalam mendukung ketahanan pangan dan perekonomian nasional. Semoga buku ini dapat menginspirasi dan memotivasi semua pihak untuk terus berinovasi dan berkontribusi dalam pengembangan hortikultura yang berkelanjutan.
